This functionality is built into the iPhone, however if you are referring to GMail and Google Calendar, then you will need to follow this guide:http://www.google.com/support/mobile/bin/answer.py?hl=en&answer=138740This will syncronize your google apps with iPod touch, and then should be available offline just as normal.Refer to the above comment for documents~

If you sync your calendars through iTunes then you do not need an internet connection to view them. Simply open your ipod touch ical app and all events should be there. As for documents you will need an app that allows viewing of them such as documents to go.
