I would like to transfer or copy all info stored on my iPhone, earlier iPods, and an iPod Touch to a new 160 GB iPod including the inherent iPhone Notes information I have saved. Is there a way I can do this mobile device to mobile device without using a PC or MAC laptop? Is there an easy and fast way to do this? For example a direct link cable? Any info on this greatly appreciated! Thanks.

In fact, you can use iTunes to backup data from your old ipod/iphone first then sync to a new ipod. Please refer to: http://support.apple.com/kb/index?page=kb&id=HT1766For ipod to ipod transfer without iTunes, you need a 3th party program to help. Try this one, I am using it now. http://www.dvd-video-soft.com/ipodconverter/ipod-iphone-ipad-to-pc-transfer.html
