I have a jailbroken iPhone which had to be restored, therefore losing all data on the phone. Before restoring, iTunes would always back up the phone, so surely my contacts must be somewhere on my Mac?! All normal recovery programs don't seem to work...

In such cases, I always backup my iPhone contacts to my computer manually so that I can restore them later. Here are several methods for backing up iPhone contacts:http://en.kioskea.net/faq/20627-iphone-contacts-sync-backup-and-editing

iPhone Back Extractor doesn't show any back-up files before the restore. Not on my Sim either. I'll try sleepers though. Thanks :)

iTunes should have made a backup of your iPhone from before the restore. If you right click the iPhone in the left hand iTunes menu, It should give a option for restoring from backup. Are your contacts stored on your SIM by any chance? You can try to Setting >> Mail, Contacts, Calendars >> Import SIM Contacts.
