I want to keep my privacy setting on Facebook as "friends only". However, occasionally I'd like to make a post that everyone can see. Is there a way to do that individually without changing my privacy setting?

set your privacy to friends only, and none of your private posts will appear on your wall.only recent activity will appear, which you can choose to hide.

Absolutely! Just take a look at the text box. On the bottom, just left of the blue "share" button, there is a drop-down menu where you can select who will be able to read that particular status.
