S-video quality is much lower. S-video is essentially an analogue technology which is better than "composite" standards, but by computer standards the resolution is low (essentially, TV resolution) and the quality of the signal much lower than even VGA. S-video is acceptable for video, but its shortcomings become obvious when you use it for static pictures and especially in PC use ("leakage" of colours, vibration etc). HDMI on the other hand provides a very high resolution and a completely stable and accurate picture (of course, the screen may not be up to all that, but the signal it gets is perfect).
