Is it possible to restore just one folder or document from the previous backup stored in the Cloud or do I have to back up the whole data? Can I avoid the whole procedure of recovery if I need just one file?

There are several software tools which allow only complete recovery without a possibility to restore just one file. But, for example, Acronis backup and recovery tool ( https://www.anrdoezrs.net/links/7251228/type/dlg/sid/UUmuoUeUpU76280/https://www.acronis.com/ ) allows you to restore even one single file.

You should be able to get any number of documents or folders back (1, 2, 100...). I've never come across a cloud backup server that didn't allow for that, but as you didn't specify which service you are using, it's impossible to give you a definite answer.
