I have a question about partitioning a hard drive. For example using GParted, if I shave 80GBs off my primary partition (C drive that included Windows 7, etc), can I ever get that 80GBs (unallocated space) back once I hit "Apply"?

Yes you can. Once it changes to unallocated space. You can use the same space by formatting it into NTFS,FAT,ext2 or ext3 based on your requirements. The only thing is that the data present before is lost for ever..

Yup, so back up your data before partitioning your hard drive.
