This will syncronize your google apps with iPod touch, and then should be available offline just as normal.

If you sync your calendars through iTunes then you do not need an internet connection to view them. Simply open your ipod touch ical app and all events should be there. As for documents you will need an app that allows viewing of them such as documents to go.

As for emails you can only view what has been kept in memory which you can't control so you will need access to pull new email for viewing.
