Threaded view means that all messages from the same person you text messaged would be grouped together in a conversation-style list, much like instant messaging or Facebook messaging. This makes it easier to follow the conversation you have with a person instead of searching through the list of all text messages for messages from a single person.

The other view for text messages would show all text messages in a single list based on the date and time the messages were sent and received, meaning that you would have to search the list of messages for text messages that corresponds with a single person since the messages are not separated and grouped by person.

SMS Threaded view combines text messages by the contact or phone number to give a conversation style look and feel for the messages. Using the regular view would only show text messages based on the date and time you sent and received messages, which can make it harder for some users to follow a conversation one had with another contact.
