How do I auto-save a text file at custom time intervals in Windows 7? For example, if I wanted to save a simple .txt document at specific times of the day.

Don't use stupid notepad.
Use something like Sublime Text or Coda. They keep unsaved changes to a file so if you edit a file and close ST and reopen it, your edit will still be there. And you can change "save_on_focus_lost" parameter to make it auto save (as seen here : http://www.rogcg.com/blog/2013/05/31/setting-auto-save-on-sublime-text-2)
