I have many video files in AVI and MKV format, but I don't know how I can add these files to my iPod and iPhone via iTunes.

First try converting your .avi files to Apple format. you can do this with AVI to iTunes Video Converter for Mac(http://www.video-converter-mac.org/import-avi-to-itunes-on-mac/) (file>export) . then you can move all your files to itunes for new ipod or iphone. For iTunes or QT, you should select an iTunes-friendly output format, such as MOV, MP4 or M4V.

You are gonna have to convert them to m4v then import them to iTunes and at the end put them into your iPad

Hello, easiest way is to use a media converter to convert from avi/mkv to mp4.  Any of the following three options in the next link can do that for you: freemake, vlc player and format factory:https://www.makeuseof.com/tag/best-windows-software/

If you have a third-party video App on your iPhone you may be able to transfer them via the App section of iTunes .Otherwise you will have to convert them into an iTunes supported format as ha14 already stated.
