my favorite is “save for web”. it allows you to find the best format and size-to quality seeting so that you can have smaller files to use on websites. (the standalone program is called RIOT http://luci.criosweb.ro/riot)

My favorite plugin is PNGOUT – it reduces the size of most PNG files by removing unnecessary meta-data.
