In general you will have to select an iOS version suited for your iPhone 3G capable of being jailbroken ~ unlocked if needed.

Then it depends on the method you have chosen:
- some tools create a custom iOS Firmware you will have to restore on the device
- some require you to upgrade iOS as usual and then run the jailbreak app

If unlocking is necessary make sure you either create custom Firmware without the modem baseband or you select an iOS Firmware shipping with an unlockable baseband.
