1. How can I transfer ALL data from my iPod Classic to an iPod touch?
2. ALL my data includes Contacts, Calendar, Photos, Music (iTunes).
3. Should the data transfer of ANY of these items be handled separately?

Thank you.

Syncios iPod Transfer can help you, which is a freeware. You can feel free to use. All the video, music, photos, data, contatcs, etc. can be easily transferred.

You can get all of your data from your iPod classic to  iPod Touch by following the steps mentioned in the link below -

    http://www.howtogeek.com/howto/30402/transfer-music-apps-and-other-data-from-an-old-gen-ipod-to-a-new-one/

I couldn't find any method to handle the data transfer separately.

The easiest way to do this is to use iTunes on your computer to backup the iPod Classic, then plug in the iPod Touch and perform a restore of the backup you just created.  Note that this will displace any data on the iPod Touch.
