How do I totally delete a message off my iPhone 4? So no one can read it or call it back?

Don’t you just need to use the edit button?
How is what you want different from that?

    To delete a whole conversation:
    -open your messages app
    -Tap Edit (top left)
-Tap the minus sign (red circle) next to the conversation you want to delete and then tap Delete (on the right)

To delete a single message from a conversation:
    -Open the conversation
    -Tap Edit (top right)
-Tap on the message you want to delete (it will check the box on the left)
-Tap the delete button at the bottom

This should delete it completely, or at least enough where no regular person would be able to access it. Another thing to consider though is that if you backed up your phone with the message on it, that message will come back if you restore from backup, so I’d delete any previous backups that may contain the message you deleted. If you back up with icloud, I think that backing up again will delete the previous backup.
