Is there any software which will disable all but one key on my laptop? I need to rest my graphics tablet on my keyboard, so I don’t want it to press random keys.

Hello, the following is a link explaining a process that could accomplish what you want.  It is accomplish by using a software name keyboard locker.  In the link, it will show you where to get it, how to use it and all the pros of the software:

You can also try using children proof software like the toddlertrap.  It is freeware but keep in mind that it also would disable your mouse.  You did not mentioned your operating system, hopefully it will be compatible with it:

press windows key, then press L then press S (you reached switch users screen.)

Now click anywhere on the screen. (it will remove focus from the user selection)

it's done, just place your tablet away from the tab key.
