I don't know about transferring music from Windows Explorer, but I know there are at least 2 iPod manager programs that sort of look like Windows Explorer and are excellent ways to transfer music without iTunes: SharePod (portable, here's a screenshot) and YamiPod (which works on models other than the iPhone/iPod Touch). I haven’t used my iPod/iPhone on Windows for a long time but I don’t think you can actually do it nowadays since iOS uses a database similar to an iTunes Library.

I think the easiest method probably is to use one of the iTunes alternatives:Songbird
