I am an instructor at my university. I want to create eBooks so that the participants (students) can read them, listen to them, and view them online. They must be able to turn the pages and go back and forth as is necessary. I want to have it available so that the students can access it on any computer either online or offline.

You can take a look at this : http://www.sophieproject.org/
But I think you would need the free cross-platform Sophie Reader to read the books. Though, Sophie books can also be read in a browser.

And finally take a look at Calibre [http://calibre-ebook.com/]. We also have a guide on Calibre - http://www.makeuseof.com/pages/download-open-book-managing-your-ebooks-with-calibre

Adobe InDesign is the industry standard, but it is not free.
