I have a Google Nexus 7 32gb wifi only tablet.
Is there any way to mirror to my Windows 7 laptop, so I can then hook to a projector and display what I am doing on the tablet?

MirrorOp is the software : http://www.mirrorop.com/

Your Android Tablet will be the sender and will use http://www.mirrorop.com/product_Android_Sender.html and your Windows PC will be the receiver and use http://www.mirrorop.com/product_Windows_Receiver.html . ROOTING required!!!

Alternatively, if it is only for projection, why don't you use a handheld pico projector with your N7. :) See the question posted by me : http://www.makeuseof.com/answers/will-the-optoma-pico-pk120-handheld-projector-work-with-android-devices/
