How can I edit boot options?

After I removed Ubuntu from a dual boot configuration with Windows XP Pro it messed up my BIOS. I could not boot. I used my system recovery disk to repair, but now at boot I must choose between the new install of XP and the one with all my settings & files. How can I delete the new & boot straight to my preferred?
