I was going to suggest Jing, but Aibek beat me.
One caveat though, free version of Jing only creates video in FLV format. But you can easily convert the video to any format you like using tons of free tools out there.

Nadesj said, if your in windows use camstudio. In linux, I would use Istanbul. On a mac, you can use the new built in feature in quicktime. You didn’t state what os so I figure I give you all the free solutions out there. PS. If your gaming, use fraps.
