I am getting into website hosting for clients. What are the pros and cons of CPanel vs Plesk? Any other options or advice?

Thanks! From what I see, I think I'm going with Plesk.

Having used both over the years, I find them both to be very capable. It also seems that no matter who the host is, they always tweak the control panel so it's a bit different than at another host.

My point is, I don't think the whether a host uses CPanel or Plesk is really a deciding factor. Level of support, uptime, cost, and others are much higher priorities to me. HostGator is the one I've been most happy with. One that rhymes with SchmoPaddy is the one I'm least likely to recommend.

You can find various comparisons between the two via an internet search.

Personally I would suggest to take a look around the live demos, see how comfortable and intuitive they feel to you. Then decide based on comfort vs. functionality.

If you are an end user starting your own website you are probably going to spend very little time in the hosting panel after the initial setup. Then you might prefer to have more functionality and options.

If you are going to do more administrative work and/or sharing things e.g. with a reseller packet you might prefer the panel which is intuitive for you.
