How can I convert videos burned to DVD and back them up to a USB flash drive on a Mac?

I have many vacation videos on DVDs. I would like to convert them to a format (wmv, flv, etc) in order to back them up on a USB flash memory stick or transfer to an iPad. How can I do this?
